Sri Lankan chicken curry

Ingredients
1 kg chicken
3 slices of ginger (shredded)
2 cloves of garlic (crushed)
10-15 shallots (tiny onions) (sliced)
1 fresh chilli (sliced)
2 cardamoms (crushed)
2 cloves (crushed)
1/2 tsp chilli powder
2 tsp paprika powder
25 gm tamarind soaked in 50 ml water
3 tbsp curry powder
1/4 tsp turmeric powder
1 tsp salt
1 stick of cinnamon oil
1/2 stem lemon grass
a sprig of curry leaves
1/4 tsp fenugreek
300 ml thick coconut milk
1/2 tsp lime juice
Method
Wash, clean and cut the chicken. Place cardamom and cloves in a bowl. Add the ginger, garlic, chilli powder, paprika powder, tamarind water, curry powder, turmeric, salt and cinnamon stick.
Mix well together, then rub into the chicken. Leave to marinate for half an hour. Heat the oil in a pan until very hot, then add the lemon grass, curry leaves, fenugreek, shallots and chilli and fry for a couple of minutes.
Add the chicken pieces and stir-fry for 3 minutes. Pour in the coconut milk and mix well. Continue to cook over a low flame for 40 minutes or until the chicken is tender.
Sprinkle lime juice and serve hot.
